To capture the essence of Sardinia in his new London establishment, the owner of Olivo commissioned Sardinian architect Pierluigi Piu. Piu's design concept embraced traditional island craftsmanship, exemplified by the 'Pibiònes' tapestry weave. This ancient technique was translated by Lithea into carved stone wall panels, accentuated by dramatic linear LED lighting. The restaurant's other walls featured a textured resin and cement finish in warm dove grey and burnt coffee tones, also thoughtfully illuminated. Finally, tables were lit with high colour rendering sources, all controlled by an automated system to create distinct lighting scenes throughout the day.

Drawing deeply from his native island's traditional culture, architect Pierluigi Piu designed the restaurant with elements inspired by local handicrafts. This is evident in features like the textured and waxed terracotta wall cladding, which evokes a flock of sheep in relief, and a bas-relief depicting scenes of Sardinian life with peasants, horsemen, shepherds, wild boars, and hunters. Carefully placed lighting highlighted these striking details, as well as the engraved, Sardinian-inspired backlit skylight and bar. A control system allowed for tailored scene settings throughout the restaurant's operating hours.
